Sautéed Chicken with Olives, Capers, and Lemon
Who knew such a beautiful and delicious dish could be so quick & easy to make? Perfect for the whole family on your busier days, this sautéed chicken is healthy, whole, and bursting with flavor. Using our Coriander & Pink Pepper Green Olives to add a perfect amount of meaty flavor, paired with full-flavored Extra Virgin Olive Oil, this will become a new dinner staple!
Ingredients
- 4 Tbsp4 Tbsp4 Tbsp Organic Everyday Extra Virgin Olive Oil - Kosterina
- 2 whole2 whole2 whole Lemon, thinly sliced
- 4 whole4 whole4 whole Boneless Skinless Chicken Breasts, sliced in half lengthwise into cutlets
- 1/2 cup1/2 cup1/2 cup Gluten Free Flour
- 1 tsp1 tsp1 tsp Salt
- 1/4 tsp1/4 tsp1/4 tsp Black Pepper
- 2 cloves2 cloves2 cloves Garlic, minced
- 1/4 cup1/4 cup1/4 cup Capers
- 1 cup1 cup1 cup Coriander and Pink Pepper Green Olives - Kosterina
- 1 cup1 cup1 cup Chicken Broth
- 1 Tbsp1 Tbsp1 Tbsp Original Extra Virgin Olive Oil - Kosterina
- 1/4 cup1/4 cup1/4 cup Parsley, minced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the lemons. Heat a large pan over medium high heat and add 1 tbsp of Kosterina Everyday Extra Virgin Olive Oil. Add the lemon slices and cook until caramelized, about 3 minutes on each side. Remove the lemon slices from the pan and set aside.
- In a shallow dish, mix together the gluten-free flour, salt, and black pepper until combined. Coat each piece of chicken in the flour mixture.
- Add 2 tbsp Kosterina Everyday Extra Virgin Olive Oil to the pan and saute the chicken until golden brown and cooked through, about 3-5 minutes on each side. Remove the chicken from the pan and set aside.
- To the pan, add 1 tbsp Kosterina Everyday Extra Virgin Olive Oil, followed by the garlic, capers, and Kosterina Coriander and Pink Pepper Green Olives. Cook for about 30 seconds, then add the chicken broth, chicken, and lemons and bring to a gentle simmer. Cook until the sauce is reduced, about 5 minutes.
- Before serving, drizzle with Kosterina Original Extra Virgin Olive Oil and top with chopped fresh parsley.
