Sheet Pan Quesadillas are such a great and easy dinner solution! My kids are always craving it and it’s perfect for feeding a crowd.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 425°F.
  2. In a large skillet over medium heat, add ground beef and brown it until cooked through, breaking it up as it cooks.
  3. Arrange tortillas on a rimmed baking sheet, placing half of the tortillas around the edges hang over the sides. Use one whole tortilla in the center to cover the entire bottom.
  4. Once the meat is browned, pour the mixture over the tortillas and spread evenly.
  5. Add chopped tomato, shredded lettuce, and sprinkle with shredded cheese. Fold the tortillas over the filling, and use an additional tortilla to cover the center of the filling.
  6. Place another pan on top of the quesadillas to press them down and maintain the shape.
  7. Bake for 20 minutes or until crispy. Remove the top baking sheet.
  8. Cut into pieces and serve with your favorite taco sides. ENJOY!
