Sheet Pan Totchos
Tater tots are kind of an addiction for me lol crispy, pillowy potatoey goodness. So, why not use them as the base for some "nachos"? Crispy, golden tots, melty cheese, black beans, cilantro, tomatoes, avocado, jalapenos, the whole kit and kaboodle.
Ingredients
- 500 grams500 grams500 grams Tater Tots, Frozen, Sprayed with Pam, see recipe
- .75 cup.75 cup.75 cup Monterey Jack Cheese, shredded, more if desired
- .5 cup.5 cup.5 cup Tomato, Grape, chopped
- 284 ml284 ml284 ml Black Beans, drained, rinsed, and half packed away.
- 1 whole1 whole1 whole Avocado, cut into chunks
- 1 whole1 whole1 whole Jalapeno Peppers, sliced. 2 if you like it even hotter
- 0.25 whole0.25 whole0.25 whole Red Onion, Larger Onion, diced. More if desired
- 1 whole1 whole1 whole Cilantro, Garnish
- 1 whole1 whole1 whole Salsa Verde, I love Herdez Guacamole Salsa
- 1 whole1 whole1 whole Sour Cream, Garnish
- 1 whole1 whole1 whole Hot Sauce, I love Valentina Super Hot
- 1 whole1 whole1 whole Himalayan Pink Salt, To Taste

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven according to the tater tot directions. Get your tots on to a parchment lined baking sheet. Spray the tots with cooking spray and season the tray with salt. Bake according to package directions until golden brown and crisp.
- Add 3 minutes to the time on the oven and carefully remove the tots to a wire cooling rack. Sprinkle the cheese over the tray followed by the sliced jals. Return the tray to the oven for the final 3 minutes until melty. Remove once again and set on to your cooling rack.
- I added my sour cream to a squeeze bottle and drizzled the tots with it. You can also do sporadic dollops. Start with the sour cream drizzle followed by sprinkling black beans, red onions, and tomatoes around the tray. Give everything a few good drizzles of your fave salsa(s) followed by the chunks of avo and heaps of fresh cilantro. Give the tray a few dashes of hot sauce or simply serve the sauce on the side.
- Serve and enjoy directly from the tray. ENJOY!
Notes
- There's so many different toppings you could include to change this up from time to time. Think pickled onions or pickled hot peppers, dollops of refried beans, pinto beans, chipotle mayo. So many options!
