Shepherds Pie
With St. Patrick's Day coming up next week I thought I'd make a few "Irish" recipes in the lead up, but now I'm genuinely not sure if Shepherd's Pie is even Irish? I seem to be getting mixed reviews.
Ingredients
Mashed Potatoes
- 5 lb5 lb5 lb Yellow Potatoes, peeled & chopped

- 0.5 cup0.5 cup0.5 cup Sour Cream
- 0.333 cup0.333 cup0.333 cup Milk

- 1 tsp1 tsp1 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 0.5 tsp0.5 tsp0.5 tsp Lawry’s Seasoning Salt
- 0.25 tsp0.25 tsp0.25 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Onion Powder

Beef Filling
- 4 Tbsp4 Tbsp4 Tbsp Butter, Salted

- 1 whole1 whole1 whole Onion, chopped
- 4 whole4 whole4 whole Carrots, peeled & chopped
- 1.5 cups1.5 cups1.5 cups Peas, Frozen
- 1.5 lb1.5 lb1.5 lb Ground Beef

- 1.5 cups1.5 cups1.5 cups Beef Broth

- 1 Tbsp1 Tbsp1 Tbsp Cornstarch
- 1 tsp1 tsp1 tsp Beef Bouillon - Better than Bouillon
- 1.5 tsp1.5 tsp1.5 tsp Worcestershire Sauce
- 1.5 tsp1.5 tsp1.5 tsp Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

- 1 cup1 cup1 cup Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Peel and chop the potatoes. Put them in a large stock pot and cover with water until fully immersed.
- Boil the potatoes until they are fork tender, about 20-25 minutes.
- Drain the potatoes and return to pot.
- Add 1/2 cup butter to the potatoes and mash until they are your desired texture.
- Stir in sour cream, milk, salt, pepper, seasoning salt, garlic powder, and onion powder.
- In a large skillet, melt 4 tablespoons butter. Add your chopped onion and carrots. Cook until the carrots have softened and onions are translucent, about 10 minutes.
- Add the ground beef and cook until no longer pink. Then drain the fat and add your frozen peas.
- In a small bowl, add beef broth, cornstarch and Beef Better than Bouillon paste. Mix until combined. Add this mixture to the beef filling along with Worcestershire sauce.
- Cook over high heat until thickened, about 5 minutes.
- Preheat oven to 350 degrees F.
- In a deep 9x 13 baking dish, add the beef mixture. Top with mashed potatoes. Top this with shredded cheese.
- Bake in oven for 30 minutes.
