Shortcut Gluten Free Guava Cake
Even someone who went to patisserie school likes a shortcut once and awhile. This cake is gluten free and so easy to make. Guavas are in season so why not make a simple guava cake? You can use any fruit puree to make this cake. Strawberry is lovely too. If you don’t have fresh guava you can use store bought puree.
Ingredients
- 111 Gluten-Free Vanilla Cake Mix - Bob's Red Mill
- .66 cup.66 cup.66 cup Guava, puree, see note
- 333 Eggs, room temperature
- .25 cup.25 cup.25 cup Water
- .5 cup.5 cup.5 cup Butter, Salted, softened room temperature

- 2 cups2 cups2 cups Powdered Sugar, sifted
- .5 cup.5 cup.5 cup Butter, Salted, softened room temperature

- .5 cup.5 cup.5 cup Guava, puree, see note

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- Line 2 8” pans with parchment paper and rub sides with oil.
- In a medium bowl add vanilla cake mix, eggs, puree, water, and butter.
- Using a hand mixer mix up the ingredients until smooth.
- Evenly divide the batter into the pans.
- Bake for 30-32 minutes. Test with toothpick to ensure they are done.
- Let cool for at least 30 minutes in pan before removing.
- While cooling prepare frosting.
- In a medium bowl combine the ingredients and mix with hand mixer until smooth.
- Frost top (sides if you like) and refrigerate for at least 15 minutes.
- Serve and enjoy.
Notes
If using fresh guavas blend in a blender until well blended. Then use a rubber spatula to run through a strainer to remove the small seeds. The seeds are edible but most people prefer them removed.
