Spam Kimchi Fried Rice (Edit recipe)

Easy, quick, and flavorful kimchi fried rice with spam! This is one of my favorite childhood dishes and the combination of spicy crunchy kimchi with tender and meaty spam is just so delicious. It's also a great way to use up day old rice!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat sesame oil in a wok or a skillet over medium high heat until hot. Add diced spam and sauté for about 4 minutes until browned and crisp on all sides.
  2. Add kimchi and onion, and cook stirring for 3-4 minutes until softened.
  3. Add rice, kimchi juice, and gochujang, and break up the rice as you stir - making sure everything is combined well.
  4. Taste, and if the fried rice is too sour (this may happen is the kimchi is too fermented), add 1/2-1 tsp of sugar to balance out the flavor and stir together.
  5. Turn off heat and stir in green onions.
  6. Divide into 3 bowls and serve warm, topped with eggs, green onions, seaweed, and/or sesame seeds - if using.

Notes

Store leftover in an airtight container in the fridge for up to 3 days.

    i feel like spam, gochujang, kimchi are all strong and great flavors but i wonder how we can make them so that each of the flavor profiles shine through but also aren’t too overwhelming and salty ?
