Stuffed Cookies (Edit recipe)

These 5 ingredient Chocolate Peanut Butter Stuffed Cookies use a cleaner boxed cookie mix to save time + mini peanut butter cups with simple ingredients that combine into the most crave worthy dessert. When we were dating, I won over my now-husband with these cookies… they’re that good. 😉

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F. Follow the instructions on the boxed cookie mix to create your batter.
  2. Roll cookie dough into balls and place in the silicone mini muffin tins.
  3. Place tin in oven and bake for 10 minutes, making sure to under-bake the cookie just a bit (otherwise it becomes too crunchy). While the cookies are baking, unwrap each of your mini peanut butter cups.
  4. Once the pan comes out of the oven, immediately insert mini peanut butter cups in the center of each cookie, pressing down.
  5. Put tray in fridge or freezer until chocolate hardens (the peanut butter cups will immediately start to melt once it touches the hot cookie dough).
  6. Once cool, pop your stuffed cookies out of the trays and serve. Enjoy!
