Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Slice tops off of the peppers and remove seeds. Carve out eyes, nose and mouth.
  2. Brown your ground beef and remove any excess fat from your skillet.
  3. Add sofrito, tomato sauce and seasonings. Cook for a few minutes until meat is fully cooked.
  4. Add cooked rice, stewed beans and shredded cheese. Stir until well combined.
  5. Stuff the peppers with mixture and top with more cheese.
  6. Bake stuffed peppers covered with foil at 400 degrees for 45 minutes. Uncover and continue baking for 15 more minutes.
