Stuffed Jack o Lantern Peppers for Halloween
These "Jack o lantern" stuffed peppers are super fun to make for Halloween! They are stuffed with savory beef, brown rice, black beans and lots of cheese. Wow your guests with this delicious entree at your next Halloween party!
Ingredients
Peppers
- 6 whole6 whole6 whole Orange Bell Pepper
Ground beef
- 1 lb1 lb1 lb Ground Beef
- 0.25 cup0.25 cup0.25 cup Puerto Rican Sofrito (click for recipe)
- 8 oz8 oz8 oz Tomato Sauce
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Healthy Rican Adobo
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp dried Oregano
- 0.25 tsp0.25 tsp0.25 tsp Ground Cumin
- 0.25 tsp0.25 tsp0.25 tsp Paprika
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
Rice
- 1 cup1 cup1 cup Brown Rice, cooked
Beans
- 1 cup1 cup1 cup Black Beans, stewed
Cheese
- 1 cup1 cup1 cup Sharp Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Slice tops off of the peppers and remove seeds. Carve out eyes, nose and mouth.
- Brown your ground beef and remove any excess fat from your skillet.
- Add sofrito, tomato sauce and seasonings. Cook for a few minutes until meat is fully cooked.
- Add cooked rice, stewed beans and shredded cheese. Stir until well combined.
- Stuff the peppers with mixture and top with more cheese.
- Bake stuffed peppers covered with foil at 400 degrees for 45 minutes. Uncover and continue baking for 15 more minutes.
