“Super” Sloppy Joe Bowl
This sloppy joe recipe is “super” because it is actually full of nourishing ingredients, packed with protein, and amazingly simple to make. It also reheats well, so it makes an awesome meal prep. I love to put my sloppy joe mixture over slaw, and add some pickled onions and sauerkraut for an extra zing.
Ingredients
- 1 lb1 lb1 lb 85% Lean Ground Beef - US Wellness Meats
- 1 cup1 cup1 cup Barbecue Sauce, I used Lillie's Q
- 3 Tbsp3 Tbsp3 Tbsp Unsweetened Ketchup - Primal Kitchen
- 2 Tbsp2 Tbsp2 Tbsp Special Sauce - Primal Kitchen, You can also substitute yellow mustard
- 1 whole1 whole1 whole Yellow Onion
- 1 whole1 whole1 whole Bell Pepper
- 1 Tbsp1 Tbsp1 Tbsp Meat & Potatoes Seasoning - Primal Palate
- 1 whole1 whole1 whole Broccoli Slaw, 1 whole bag of salad mix of choice
- 1 Tbsp1 Tbsp1 Tbsp Organic Everyday Extra Virgin Olive Oil - Kosterina
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Organic Garden Ranch Seasoning Mix - Primal Palate
- 0.25 cups0.25 cups0.25 cups Bread & Butter Pickles and Peppers - Mama Lil's, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all of the slaw components to a bowl and mix together, place in the fridge until ready to serve.
- Dice onion and red bell pepper
- In a saucepan over medium heat, add cooking oil of choice along with the ground beef. Cook until the meat is browned, and add the meat and potatoes seasoning.
- Take the beef out of the pan and drain any excess oil.
- Add onions and bell peppers to the pan, and sauté until onions are translucent.
- Add the beef back to the saucepan, along with the bbq sauce, ketchup, and special sauce.
- Turn the heat down to a simmer and cover with a lid for about ten minutes or longer to let the sauce flavor the beef.
- Serve over the slaw, and add additional toppings such as pickled onions.
Notes
This recipe pairs so well with my cherry habanero corn muffins which are the perfect side to soak up that delicious sauce.
