  • 2 Cauliflower, bags Trader Joe's Gnocchi, frozen
  • 4 pieces Chicken Sausage, Links 25 inch thick), sliced
  • 2 cups Broccoli, Veggies of choice: florets (cauliflower, brussels sprouts(halved), onions)
  • 2 Tbsp Avocado Oil
  • .5 tsp Garlic Powder
  • .5 tsp Salt

Process

  1. Preheat oven to 425u00b0, prepare pan with parchment paper to prevent sticking & for easier clean up.

  3. Spread frozen gnocchi, chicken sausage and veggies evenly across baking sheet. If the gnocchi pieces are stuck together, let thaw for a few minutes and then gently break apart before baking.
  4. Pour the oil mixture over everything and toss until well combined.
  5. Bake for 25-30 minutes, stirring halfway through.
  6. Serve with pesto for dipping.
