Refreshing pandan, coffee & coconut agar jelly dessert with homemade pandan extract.
Ingredients
Pandan Layer
- 1 cup1 cup1 cup Water, cold (or pandan flavoured water)
- 1 tsp1 tsp1 tsp Agar Agar Powder

- 4 Tbsp4 Tbsp4 Tbsp BochaSweet (Sugar Replacement), (or sweetener of choice)

- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)

- Homemade Pandan Extract Using Fresh Leaves (click for recipe)
Coffee Layer
- 2/3 cup2/3 cup2/3 cup Heavy Whipping Cream
- 1 tsp1 tsp1 tsp Agar Agar Powder

- 4 Tbsp4 Tbsp4 Tbsp BochaSweet (Sugar Replacement), (or sweetener of choice)

- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)

- 2/3 cup2/3 cup2/3 cup Coffee, Brewed, fresh

Coconut Layer
- 2/3 cup2/3 cup2/3 cup Water, cold
- 1 tsp1 tsp1 tsp Agar Agar Powder

- 3 Tbsp3 Tbsp3 Tbsp BochaSweet (Sugar Replacement), (or sweetener of choice)

- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)

- 2/3 cup2/3 cup2/3 cup Coconut Milk

- In a saucepan on medium heat, combine all the ingredients for the pandan layer and cook until combined and dissolved.
- Pour the pandan mixture into a mold. Let set slightly while you work on another layer.
- Repeat steps 1 & 2 for the coffee layer and coconut layer.
- After filling the molds with all the layers, chill it in the refrigerator until firm and cold. Serve.
