Triple Layered Keto Agar Jelly Bites With Homemade Pandan Extract
Refreshing pandan, coffee & coconut agar jelly dessert with homemade pandan extract.
Ingredients
Pandan Layer
- 1 cup1 cup1 cup Water, cold (or pandan flavoured water)
- 1 tsp1 tsp1 tsp Agar Agar Powder
- 4 Tbsp4 Tbsp4 Tbsp BochaSweet (sugar replacement), (or sweetener of choice)
- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)
- Homemade Pandan Extract Using Fresh Leaves (click for recipe)
Coffee Layer
- 2/3 cup2/3 cup2/3 cup Heavy Cream (Whipping Cream)
- 1 tsp1 tsp1 tsp Agar Agar Powder
- 4 Tbsp4 Tbsp4 Tbsp BochaSweet (sugar replacement), (or sweetener of choice)
- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)
- 2/3 cup2/3 cup2/3 cup strongly brewed Coffee, fresh
Coconut Layer
- 2/3 cup2/3 cup2/3 cup Water, cold
- 1 tsp1 tsp1 tsp Agar Agar Powder
- 3 Tbsp3 Tbsp3 Tbsp BochaSweet (sugar replacement), (or sweetener of choice)
- 1/8 tsp1/8 tsp1/8 tsp Sea Salt, (optional)
- 2/3 cup2/3 cup2/3 cup Coconut Milk

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a saucepan on medium heat, combine all the ingredients for the pandan layer and cook until combined and dissolved.
- Pour the pandan mixture into a mold. Let set slightly while you work on another layer.
- Repeat steps 1 & 2 for the coffee layer and coconut layer.
- After filling the molds with all the layers, chill it in the refrigerator until firm and cold. Serve.
