Veggie Tacos with Coconut Lime Slaw
A flavorful veggie alternative to taco night. Crumbles of cauliflower are seasoned exactly the same as ground beef would be to fill the tacos. They are complimented by the tangy slaw and a delight for the whole family.
Ingredients
Main Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 head1 head1 head Cauliflower, finely chopped, or 2 lbs frozen riced cauliflower
- 111 Onion, medium, finely chopped
- 6 oz6 oz6 oz Tomato Paste
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Oregano, Dried
- 1.5 tsp1.5 tsp1.5 tsp Paprika
- 1 Tbsp1 Tbsp1 Tbsp Cumin, Ground
- .25 tsp.25 tsp.25 tsp Chipotle Chili Pepper
- 1 tsp1 tsp1 tsp Salt, fine
- .5 tsp.5 tsp.5 tsp Black Pepper, ground
Coconut Lime Slaw
- 151515 Corn Tortilla, give or take a few depending on how much filling you use
- 16 oz16 oz16 oz Coleslaw Mix (Shredded Cabbage and Carrots)
- .5 cup.5 cup.5 cup Coconut Milk, I use Aroy-d brand coconut milk
- .5 cup.5 cup.5 cup Mayonnaise, or vegan mayo
- .5 cup.5 cup.5 cup Cilantro, chopped
- .25 cup.25 cup.25 cup Lime Juice, approximately 2 limes
- 1 tsp1 tsp1 tsp Sugar, Raw
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For the taco filling:
- Heat a large pan with enough oil to coat the bottom. Add onion and cook until soft and translucent. Add cauliflower and stir. Cook until cauliflower has softened slightly, then add the seasonings and tomato paste, stirring until well combined after each. Then allow to heat through for about 5 minutes.
- Prepare the slaw by combining all ingredients in a large bowl and mix well and set aside.
- My hack for soft corn tortillas that won't break and fall apart is to place 5-10 tortillas in a stack on a damp paper towel and fold it over to cover the tortillas completely. Place the bundle of tortillas in the microwave for about 30-45 seconds.
- Once heated, spoon the Cauliflower Taco Filling and Coconut Lime Slaw on each tortilla and start gobbling them up right away!
