Whipped Cottage Cheese & Feta Dip
If you want a crowd pleasing appetizer this is a must try! Full of flavor and so impressive!
Ingredients
- 10 fl oz10 fl oz10 fl oz Tomato, Cherry

- 1 head1 head1 head Garlic, 2 for the dip the rest goes in the tomatoes

- 16 oz16 oz16 oz Cottage Cheese
- 4 oz4 oz4 oz Feta Cheese
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 1 Tbsp1 Tbsp1 Tbsp Organic Balsamic Glaze

- 2 tsp2 tsp2 tsp Salt

- 1 tsp1 tsp1 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by coating your tomatoes with 1 tablespoon of olive oil, salt pepper and the head of garlic (minus 2 cloves). Roast your tomatoes in a 400 degree oven for 15-20 minutes. While your tomatoes roast, add your cottage cheese, feta cheese, 2 garlic cloves, olive oil & salt and pepper to a food processor. Blend until creamy. This takes 3-5 minutes. Poor your cheese mixture onto a serving plate, add the roasted tomatoes on top. Drizzle with the balsamic vinegar glaze and enjoy!
- I like to serve this with slices baguette or bagel chips.
