“Red White and Blue” Coconut Popsicles
Need a healthy creamy popsicle with minimal ingredients that comes together in a jiffy? These 5 ingredient creamy and tangy popsicles are perfect ! I wanted to recreate a dairy free version of the Mexican Coconut Paletas I ate while strolling on the Highline in New York , so I created one with Coconut Cream and added a dash of fruity flavors to it with blueberries and raspberries. The colors were inspired by the 4th of July holiday but you can make these all summer. It's a perfect creamy dairy-free paleo-friendly summer treat without any artificial ingredients. It does not even need any blending!
Ingredients
- 2 cups2 cups2 cups Coconut Cream, Use one can of coconut cream
- 4 Tbsp4 Tbsp4 Tbsp Coconut Palm Sugar, can sub with regular sugar
- 1 cup1 cup1 cup Blueberries
- 1 cup1 cup1 cup Organic Raspberries
- 1 Tbsp1 Tbsp1 Tbsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pour a can of Coconut Cream in a mixing bowl , you can also use full fat coconut milk from a can. The coconut cream will be creamier
- Add 3-4 Tbsp of coconut palm sugar or regular sugar to the bowl and the vanilla extract. Mix it well
- Pour the mix into popsicle molds and add a few blueberries and raspberries to it. You can also use strawberries if you prefer
- Freeze overnight
- Before eating, leave out the popsicles for 15 minutes at room temperature
Notes
- Coconut cream can be substituted with full fat coconut milk from a can - Coconut palm sugar can be substituted with regular sugar or maple syrup. Amount of sweetness can be adjusted based on your tastes. Remember that once things are frozen, they taste slightly less sweeter than when you taste them unfrozen - I prefer to use molds that lie flat for this so the fruit does not settle in just one part of the popsicle but if that is not an issue for you, use any kinds of molds
