These Mango Passionfruit Chia Bowls are simple to prepare yet impressive to serve. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Mix the Chia Pudding

  1. In a bowl, combine the coconut milk and chia seeds
  2. Whisk thoroughly to avoid clumping
  3. Refrigerate this mixture and refrigerate for atleast 4 hours, preferably overnight until it thickens into a pudding

Prepare the Mango "bowls" and Puree the Mango

  1. Carefully slice the mangoes in half without cutting through the seed
  2. Scoop out the mango flesh with a spoon, keeping the peel intact to form two natural bowls.
  3. Set the peels aside in the fridge to keep them firm and fresh
  4. Blend the scooped mango flesh in a blender until completely smooth.
  5. Reserve about 3 tablespoons of the purée for topping later.

Assemble the bowls

  1. Remove the chia pudding from the fridge
  2. Add the mango puree, Profanity's passionfruit habanero jelly and vanilla extract. Mix well
  3. Spoon the thickened mango chia pudding into the chilled mango peels.
  4. Drizzle the reserved mango purée on top.
  5. Crush the frozen raspberries in your hand to form "raspberry beads" and garnish the bowls with this. You can also use any other toppings of choice like nuts, cranberries and pomegranate seeds
  6. Serve chilled for a delicious dessert that will have everyone raving!

Notes

  • For extra texture, you can fold in a few chopped mango chunks into the chia pudding before chilling
  • Use coconut milk from a can for creamier texture
  • If you don't have access to fresh ripe mangoes, use frozen mango chunks
