Pizza Sciachiatta (Similiar to Focaccia Bread)
Most of you have heard of Focaccia, but have you ever heard of Sciachiatta? Well if you haven't, I'm here to explain to you that this bread is the exact same recipe as my Focaccia bread, but is made slightly differently. This bread is great for pizza, sandwiches and a delicious snack! I have transformed this bread into the ultimate pizza. This bread requires No Kneading & No fancy equipment. A bowl, a measuring cup, a rubber spatula & a baking sheet is all you'll need. This is topped with my homemade tomato sauce, mozzarella, parmesan, pepperoni and hot honey for that added sweetness!
Ingredients
- 512 grams512 grams512 grams All Purpose Flour, or 3 cups spooned and levelled
- 1 tsp1 tsp1 tsp Salt
- 2 cups2 cups2 cups Water, 110F
- 2 Tbsp2 Tbsp2 Tbsp Cane Sugar, or HONEY
- 2 tsp2 tsp2 tsp Active Dry Yeast
- 5 - 6 Tbsp5 - 6 Tbsp5 - 6 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a measuring cup, make sure to add in 2 cups of Luke warm water about 110F.
- add in your Honey or Sugar, mix and dissolve.
- add your yeast in and let it foam up.
- this should take 10 mins.
- in a large bowl, add in your flour & salt and mix until all incorporated.
- add in your yeast/water mixture and 1 tbs of olive oil.
- mix until all flour absorbs the moisture,.
- cover with another tablespoon of olive oil.
- cover it and let it ride for 45 mins to and hour (less time than Focaccia).
- once it has double in size, oil your hands and scrap the sides down.
- pull and stretch method - pivot 4 times doing 1 full rotation.
- do full rotations in order to build some structure.
- cover it again for 15 mins to let the gluten relax.
- on a greased baking sheet, place your dough on and slightly stretch out to shape of pan.
- Cover it and leave it alone for another 45 mins.
- after 45 mins, being forming dough to size of pan.
- pre-heat your oven to 500F
- drizzle more olive oil over dough.
- this is optional, but if you aren't or are ,making pizza, you can season dough.
- proceed to lightly dimple the dough.
- do not puncture the dough as this will lead to spillage through the bread which could lead to soggy areas.
- once this is complete, place your sciachiatta in the oven for 6-8 mins to crisp up the top.
- take bread out of oven, then top with your favourite pizza toppings.
- place back in the oven for additional 6-8 or until your desired crispiness.
- let it cool for 5-10 mins, slice and serve.
