Spaghetti and Meatballs (GF/DF)
Being a few months into my gluten and dairy free journey, I figured it was time to recreate a childhood favorite of mine.
This dish has fresh herbs, tender beef, and perfect al-dente pasta. I also used a little trick to make this dish less harsh on sensitive stomachs like mine! Make sure to give it a save for your next Sunday Sauce!
Ingredients
Meatballs
- 1 lb1 lb1 lb US Wellness Meats Ground Beef (85% Lean)
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.125 cup0.125 cup0.125 cup Onion, shredded
- 0.25 cup0.25 cup0.25 cup Parsley, chopped
- 2 whole2 whole2 whole Egg
- 0.25 tsp0.25 tsp0.25 tsp dried Oregano
- 1 tsp1 tsp1 tsp Garlic, minced
- 1 cup1 cup1 cup Gluten Free Breadcrumbs (click for recipe)
sauce
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 0.125 cup0.125 cup0.125 cup Garlic, chopped
- 0.25 cup0.25 cup0.25 cup Onion, chopped
- 28 fl oz28 fl oz28 fl oz Diced Tomatoes
- 16 fl oz16 fl oz16 fl oz Tomato Sauce
- 1 tsp1 tsp1 tsp Garlic Salt
- 0.25 cup0.25 cup0.25 cup Parsley, chopped
- 3 whole3 whole3 whole fresh Basil, 3 leaves
- 0.125 tsp0.125 tsp0.125 tsp Baking Soda, (optional to prevent heartburn)

- 1 whole1 whole1 whole Gluten Free Spaghetti (Jovial)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preparation:
- (Meatballs)
- - mix meat, eggs, herbs, spices, and breadcrumbs together.
- - take 1/4 cup mixture and roll between hands to create meatballs.
- - heat oven to 425.
- - place meatballs on a pre greased cast iron skillet, & place in oven for 15 minutes.
- (Sauce)
- - pre heat sauce pot or dutch oven to medium high heat with olive oil.
- - add garlic & onion and cook for 2 minutes.
- - add tomatoes, herbs, & spices.
- - add meatballs.
- - allow to cook on medium low heat for 2 hours.
- - remove from heat, and remove meatballs prior to serving.
- - Add baking soda to sauce to neutralize acid.
- (Pasta)
- - add water, salt, & oil to pot and bring to boil.
- - add spaghetti.
- - cook for 10-12 minutes.
