We found a local u-pick blueberry farm and had to stop by. I couldn’t believe just how delicious a blueberry straight from the bush was! We were lucky enough to leave with 12 gorgeous pints, so I wanted to make something extra delicious with all of the fresh fruit. These chocolate covered blueberry clusters are a perfect no-bake, refreshing treat for the warm days of summer. Hope you love them as much as we did!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small microwave-safe bowl, add your chocolate and coconut oil. Melt your chocolate in the microwave in increments of 30 seconds, stirring in between, until fully melted.
  2. Pour the melted chocolate into a bowl with your blueberries. Make sure they are fully dried; any moisture could cause the chocolate to seize up.
  3. Mix the blueberries until they are fully coated on all sides with the melted chocolate.
  4. Using a spoon, create clusters on a parchment-lined baking sheet. They don’t have to be perfect—just go with what feels right in terms of size and how many blueberries are in each one!
  5. Sprinkle the clusters with crushed dried blueberries and flakey salt.
  6. Place the baking sheet into the fridge for about 20-30 minutes, or until the chocolate is fully hardened.
  7. Enjoy chilled within a couple of days, if they last that long!

Notes

Ensure the blueberries are fully dried before mixing with the chocolate to prevent it from seizing up.
The crushed blueberries are optional but add a fun touch! I chose to use half dark and half semi-sweet chocolate, but you can use just one type if you prefer.
1 cup of blueberries yielded about 6 large clusters for me, but you can make them any size you want. If you want more clusters, you can increase the amount of blueberries you use, or make the clusters smaller!
Store any leftover bites in an airtight container in the fridge for up to a couple of days.
