Vegan Chocolate Covered Strawberry Yogurt Clusters

Ingredients
- 7 whole7 whole7 whole Strawberries, = 1 cup chopped strawberries
- 0.75 cup0.75 cup0.75 cup Plain Yogurt, vegan
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, or 2 - adjust to how sweet you like it
- 1.5 cups1.5 cups1.5 cups Semi-Sweet Chocolate Chips
- 1 tsp1 tsp1 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a baking tray with parchment paper and set aside.
- Cut the stem off your strawberries, chop them into small pieces and place in a medium-sized bowl.
- To your bowl, add in maple syrup and vegan yogurt and stir to combine.
- Using a tablespoon, scoop the yogurt covered berries and drop spoonfuls onto your baking tray. Place in the freezer for 20-30 minutes.
- In the meantime, melt your chocolate by combining chocolate and coconut oil in a bowl and microwave in 25-30 second increments until chocolate is fully melted and smooth.
- Take yogurt clusters out of the freezer and dip both sides in the chocolate. Place back on baking tray and put back in the freezer for another 15-20 minutes. Optional: top with flaky salt before enjoying!
Notes
How to store: Keep in the freezer for up to one month in an airtight container.
