This little strawberry French toast, oatmeal cookie skillet is perfect after dinner for you and maybe one other person! Calls for minimal ingredients and it is absolutely delicious. This cookie skillet is gluten and dairy free. It’s the perfect treat to make when you want something sweet.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 350° and pull out a mini cast-iron skillet
  2. And a mixing bowl, add your rolled oats, gluten-free All purpose, flour, baking powder and cane sugar. Together until it is all blended. Then add almond butter And egg. Mixed together.
  3. Chop up your strawberries and add them to the mix and stir.
  4. Pour mix into the skillet. Top with your choice of white chocolate chips. Place in the oven and bake for 15 to 18 minutes.
  5. Top with ice cream and enjoy while warm!

Notes

For the almond butter, I used the all American dream strawberry French toast, nut butter. If you do not have this nut butter, it will be OK with just regular almond butter or you can add a touch of cinnamon to the batter.
