Little Bites Muffins
Gluten free, no refined sugar, and protein boosting muffins that your kids will love, and you'll love the wholesome ingredients they're eating!
Ingredients
- 1.5 cup1.5 cup1.5 cup Gluten Free Flour
- 1 tsp1 tsp1 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Baking Soda
- 1 pinch1 pinch1 pinch Sea Salt
- .25 cup.25 cup.25 cup Unsalted Butter, Melted
- 1 cup1 cup1 cup Plain Greek Yogurt, Full fat
- .5 cup.5 cup.5 cup Pure Maple Syrup
- 2 whole2 whole2 whole Egg
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- .75 cup.75 cup.75 cup Semi-Sweet Mini Chocolate Chips, Or 2-3 tbsp sprinkles

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk dry ingredients together in one bowl
- In another combine all wet ingredients, add dry to wet and combine, then fold in chocolate chips, reserving some for topping
- Evenly distribute among a 24 mini muffin pan
- Bake at 350 for 12-13 minutes until tops start to golden
- Allow to cool a few minutes, then pop out of the muffin pan and place on a cooling rack
- Store in an airtight container
