Buckeye Mummies
These buckeye mummies are such a fun treat for Halloween. They’re so simple to make and always a hit with the kids!
Ingredients
- 1 cup1 cup1 cup Almond Flour
- 1 cup1 cup1 cup Organic Creamy Peanut Butter, unsalted
- 0.333 cup0.333 cup0.333 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 cup1 cup1 cup Sugar Free White Chocolate Chips
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 30 - 32 whole30 - 32 whole30 - 32 whole Candy Eyes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix all ingredients in a medium sized bowl.
- Roll them into balls and place on a parchment lined baking sheet. Place the pan in the freezer for 30 minutes to firm up.
- Melt chocolate chips mixed with coconut oil.
- Using a bamboo stick or toothpick, dip each ball into chocolate, leaving a little bit of the top showing.
- Once all have been dipped, drizzle more chocolate on top to create a mummy. Add candy eyeballs to each one. Make sure to do this before chocolate on top hardens!
- Stick them back in the freezer for 30 minutes to firm up. Store them in the freezer and allow them to thaw for a few minutes before eating.
Notes
Lollipop sicks are optional! If you do use them, dip the stick in some white chocolate before placing into buckeye so it sticks! Here is the link to them: Lollipop Sticks
