It’s no secret that I’m a fan of food projects and recipes that utilize the slow cooked method. Whether it’s in the oven while making fall off the bone tender meat dishes, on the smoker or even in the slow cooker, there’s just something that is magical to me about cooking through the day. I’ve also been a fan of duck and because it’s a tougher bird than chicken, it’s the perfect candidate for a crispy slow cooked duck recipe.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Season duck quarters on all sides with salt, pepper and BBQ rub and set aside.
  2. Line the bottom of your slow cooker or Instant Pot with root vegetables, onion and garlic. Add water to crock pot. This will help avoid scorching when cooking starts. Place duck quarters on top of root vegetables. Cover and cook on low for 10-12 hours.
  3. When ready, preheat oven to 400° F (205° C).
  4. Remove duck quarters and root vegetables from crock pot and place in a foil lined baking sheet or roasting pan and roast until skin on the duck is crispy. About 15-20 minutes.
  5. Remove from oven and serve duck over root veggies.
