Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 180c fan assisted.
  2. Place quinces in a saucepan with the water, sugar(1/2 cup), lemon juice, cinnamon, nutmeg & vanilla. Bring to a simmer and cook for 5 mins or until the quinces are cooked and soft. Stir through the ground almond, then the apple and remove from the heat. Place in a dish and set aside.
  3. In a bowl, mix olive oil and maple syrup together, mix in the coconut sugar. Sprinkle in the oats, ground almonds and chopped nuts. Fold together until well combined. Dollop over the fruit mixture evenly.
  4. Bake in the oven for 25 mins until the top has started to turn golden in colour. Serve with ice-cream, cream or custard.
