Honey Prune Chicken
Here is my home comfort chicken dish, fruity, tangy and nutritious as a bonus! Simmered in a full flavoured turmeric stock. This chicken dinner is perfect straight from the oven or freezer and enjoyed with either pasta or rice. Warm winter entrée for your family and friends.

Ingredients
- 4 whole4 whole4 whole Boneless Skinless Chicken Breasts, diced
- 1 whole1 whole1 whole Onion, chopped
- 1 Tbsp1 Tbsp1 Tbsp Garlic, finely chopped
- 1 whole1 whole1 whole Russet Potatoes, peeled and diced
- 1 cup1 cup1 cup Chickpeas, whole can drained
- 2 cups2 cups2 cups Prunes (dried plums), chopped
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar
- 2.5 tsp2.5 tsp2.5 tsp Kosher Salt
- 2.5 cups2.5 cups2.5 cups Chicken Stock
- 2 tsp2 tsp2 tsp Turmeric
- 3 Tbsp3 Tbsp3 Tbsp Sunflower Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat the oven to 350F.
- In a large lidded oven proof pot, brown the chicken in batches using the oil. Set the chicken aside.
- In the same pot sauté the onion.
- Add the turmeric and garlic and sauté for 10 seconds.
- Add all the remaining ingredients and stir to combine.
- Add the chicken back into the pot.
- Place the lidded pot into the oven and cook for 1 hour.
- Adjust the salt and serve.
