Old Fashioned Tea/Coffee Fudge
Let's take an old fashioned fudge and add a bit of complexity! You can use any tea or coffee, but I chose to make this fudge with Sip Herbals Peppermint Mocha Faux Joe.
Ingredients
- 2 cups2 cups2 cups Cane Sugar
- 0.5 cup0.5 cup0.5 cup Cocoa Powder, unsweetened

- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 0.5 cup0.5 cup0.5 cup "Peppermint Mocha" Faux Joe Coffee Alternative (Loose Leaf) - Sip Herbals, Brew with double amount called for, to make stronger/concentrated (see note)

- 0.5 cup0.5 cup0.5 cup Butter, Salted

- 2 tsp2 tsp2 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line an 8x8 baking dish with parchment. If you ball up the parchment under running water and then squeeze the excess water out, it's easier to work with.
- Combine sugar, cocoa, cream, and tea in sauce pan.
- Over medium heat, whisk constantly, bring the mixture to a gentle boil. Using a thermometer, monitor the temperature of your mixture. Once it reaches 235F remove from heat and stir in vanilla. You may have to play with the heat a bit, but understand there will be a point usually about 200-220F that it will stall out and take some time to get past. Do not leave the pan as it may try to boil over.
- Transfer to a mixing bowl with a pour spout if your sauce pan isn't big enough and then beat the mixture until it thickens and loses its glossiness. I use an electric handheld beater for this, on low. Stop as soon as the fudge shows its first signs of matte-ness.
- Now pour into the 8x8 lined baking dish and spread it out evenly with spatula.
- Allow fudge to cool for 3 hours and then lift out of baking dish using the parchment edges. Now you may cut the fudge.
- Serve immediately or store in a covered container for about a week.
Notes
If using Sip Herbals Peppermint Mocha Faux Joe you'll brew 2 tsp in 1/2 cup of boiling water for 3 minutes.
