Cranberry Orange Crumb Bars (gluten-free)
Bursting with holiday flavor, these bars are made with a simple oat crust and crumble and a delicious cranberry orange filling!
Ingredients
- 1 cup1 cup1 cup Oat Flour

- 1 cup1 cup1 cup Gluten-Free Rolled Oats
- 0.5 cup0.5 cup0.5 cup Coconut Sugar

- 0.25 tsp0.25 tsp0.25 tsp Baking Soda
- 6 Tbsp6 Tbsp6 Tbsp Butter, Unsalted

- 3 Tbsp3 Tbsp3 Tbsp Orange Juice
- 1.333 cup1.333 cup1.333 cup Dried Cranberries, Organic
- 0.75 cup0.75 cup0.75 cup Plain Greek Yogurt, I used dairy-free
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Oat Flour

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 tsp1 tsp1 tsp Orange Zest

- 1 whole1 whole1 whole Egg Whites

- Preheat oven to 350 degrees & prep an 8x8 pan.
- Combine crust ingredients until crumbly. Remove 1/2 cup for topping & set aside.
- Press remaining crust ingredients into prepared pan.
- Add filling ingredients to a bowl and combine.
- Spread over crust, then sprinkle with reserved crumb topping.
- Bake for 40 minutes, let cool, then slice!
