Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, line a baking sheet with parchment paper. Set it aside for later.
- In a microwave-safe bowl, combine the granulated sugar and corn syrup. Stir well to ensure they are thoroughly mixed.
- Microwave the sugar and corn syrup mixture on high for 3 minutes.
- Carefully remove the bowl from the microwave using oven mitts, as it will be very hot.
- Add the unsalted peanuts to the hot mixture and stir until the peanuts are evenly coated.
- Microwave the mixture on high for an additional 3 to 4 minutes, until it turns a light golden brown color. Keep a close eye on it to prevent burning.
- Carefully remove the bowl from the microwave and quickly stir in the unsalted butter and vanilla extract. Be cautious, as the mixture will be extremely hot.
- Return the bowl to the microwave and microwave on high for another 1 to 2 minutes, until the mixture becomes a rich caramel color.
- Remove the bowl from the microwave and quickly stir in the baking soda. The mixture will foam and increase in volume, so stir briskly to incorporate the baking soda.
- Immediately pour the hot mixture onto the prepared baking sheet. Use a greased spatula or the back of a spoon to spread it out into a thin, even layer.
- Allow the peanut brittle to cool completely at room temperature until it hardens and becomes brittle.
- Once cooled and hardened, break the peanut brittle into smaller pieces.
- Store the peanut brittle in an airtight container at room temperature.
Notes
All microwaves are different, so keep a close eye while microwaving. Use an oven mitt when handling the microwave-safe bowl. It becomes very hot! Allow the peanut brittle to fully cool and become set. Then, break into pieces. Store in an airtight container at room temperature for up to 1 week.
