This is an easy Christmas dessert that can be made ahead of time and kept in the freezer to pull out when needed.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place pecans in the base of a food processor and process until fine.
  2. Add dates and process until well combined, no big chunks.
  3. Add cinnamon and cocoa powder, salt and cranberries and 1/3 cup coconut. Pulse until well combined.
  4. Roll into balls and press the balls into the remainder of the coconut.
  5. Chill for 30 minutes.
  6. Enjoy!
