Cranberry Date Bites
This is an easy Christmas dessert that can be made ahead of time and kept in the freezer to pull out when needed.
Ingredients
- 2 cups2 cups2 cups Pecans

- 3 cups3 cups3 cups Medjool Dates
- 2 Tbsp2 Tbsp2 Tbsp Cocoa Powder

- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 cup1 cup1 cup Coconut, Shredded, unsweetened, divided

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place pecans in the base of a food processor and process until fine.
- Add dates and process until well combined, no big chunks.
- Add cinnamon and cocoa powder, salt and cranberries and 1/3 cup coconut. Pulse until well combined.
- Roll into balls and press the balls into the remainder of the coconut.
- Chill for 30 minutes.
- Enjoy!
