Peanut Butter Blossoms (Gluten Free!)
A gluten free version of my mom's holiday cookie tradition!
Ingredients
- 1 cup1 cup1 cup Peanut Butter, smooth
- .5 cup.5 cup.5 cup Granulated White Sugar, Plus 2 Tbsp for rolling the cookies
- .5 cup.5 cup.5 cup Light Brown Sugar, lightly packed
- .5 cup.5 cup.5 cup Unsalted Butter, softened
- 1 Tbsp1 Tbsp1 Tbsp Milk
- 111 Egg, large
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1.5 cup1.5 cup1.5 cup Gluten Free 1-to-1 Baking Flour (Bob's Red Mill)
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Kosher Salt
- 202020 Chocolate Kisses, more if needed, milk or dark chocolate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl or mixer, beat together the butter and both sugars. Combine the egg, milk, vanilla extract, and Peanut Butter & Co. Smooth Operator Peanut Butter until smooth. In another bowl, combine the gluten free 1-to-1, baking powder, baking soda, and kosher salt until homogenous. Then carefully mix in the dry ingredients.
- On a dish, pour the additional granulated sugar. Measure out the dough into 20-22 equal sized balls and roll them in the sugar. Place them on baking sheets and bake for 13-15 minutes at 350F. Carefully pull them out and immediately place a holiday kiss candy in the center of each while still warm.
- Allow to rest for several minutes and enjoy!
