Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Using gloved hands, remove the seeds of guajillo and ancho pepper then put them in a bowl, add 2 cups of hot water. Cover with plastic wrap, set aside
  2. On medium low heat, a heavy bottom saucepan with oil on . Add  onion, celery, bell pepper. Cook until translucent. 
  3. Add onion powder, garlic powder, paprika, chilli pepper, cumin , black pepper and sazon. Stir and allow to toast for 30 seconds. 
  4. Add ground beef, chorizo, garlic & salt to taste. Cook for 10 minutes. Stir occasionally to avoid sticking and burning. 
  5. In a blender, add guajillo, ancho pepper and chipotle pepper and 1 cup of the water it was hydrating in. Puree until smooth. 
  6. Reduce heat then add blended chillis and tomatoes. Cook for 15 minutes. Stir occasionally to avoid sticking. 
  7. Add kidney and black beans and allow to cook for 10 minutes. 
  8. Stir in chopped green onions, parsley and cilantro. Cover the pot with a lid, remove from heat and set aside.
  9. Serve with sourcream, avocado and cheddar cheese. 

Notes

Yields 20 4 oz portions.
