Healthy Beef Chili
My favorite easy chili recipe full of ground beef and black beans is such a satisfying and comforting bowl of chili!
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 111 Onion, medium, diced
- 1 lb1 lb1 lb Ground Beef, Lean (I use 96/4)
- 15 oz15 oz15 oz Black Beans, drained and rinsed (1 can)
- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste
- 28 oz28 oz28 oz Crushed Tomatoes
- 1 cup1 cup1 cup Beef Broth
- 1 Tbsp1 Tbsp1 Tbsp Garlic Powder
- .75 Tbsp.75 Tbsp.75 Tbsp Chili Powder
- .5 tsp.5 tsp.5 tsp Chipotle Powder, (If you are sensitive to heat, use less)
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Cumin, Ground
- 2 tsp2 tsp2 tsp Salt
- .5 tsp.5 tsp.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large pot over medium heat, heat the oil and sauté the diced onions until they are starting to brown.
- Add the beef, tomato paste, and all of the spices. Let this cook for about 5-10 minutes or until the beef is nice and brown. The more you brown the meat, the better the flavor will be.
- When the beef is just about done browning, add the crushed tomatoes, mix well and let this come to a low boil.
- Add the beans and beef broth and then cover and cook on low heat for 25-30 minutes.
- Turn off heat and serve immediately with your favorite toppings or eat alone.
