Carambola “Starfruit” Galette
This recipe highlights the tart yet sweet flavor of the starfruit.
Ingredients
For Chutney
- 3 cup3 cup3 cup Starfruit, small dice
- 2 tsp2 tsp2 tsp Ginger Root, finely minced
- 1 tsp1 tsp1 tsp Lime Juice
- 0.75 cup0.75 cup0.75 cup Granulated White Sugar
- 0.25 cup0.25 cup0.25 cup Cornstarch, add 2TB for slurry
- 1.5 cup1.5 cup1.5 cup Water
- 0.125 tsp0.125 tsp0.125 tsp Angostura Bitters
For Pastry dough
- 1.5 cup1.5 cup1.5 cup All Purpose Flour
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted, cut into cubes
- 1 Tbsp1 Tbsp1 Tbsp Granulated White Sugar
- 0.25 cup0.25 cup0.25 cup Ice Water
- 0.125 tsp0.125 tsp0.125 tsp Kosher Salt
- 111 Egg, add 1 TB for eggwash

For Chutney
- On medium heat add carambola, ginger, lime juice, sugar and water in a heavy bottom saucepan, let boil.
- Add cornstarch and water to form a slurry and add to saucepan. Allow to boil until it slightly thickens. Stir continuously to avoid sticking.
For Pastry dough
- In a large mixing bowl, add the flour, sugar, and salt. Stir to combine thoroughly.
- Add butter. Using your fingers, make coarse crumbs then slowly add the water.
- Knead until a smooth dough is formed (5minutes). Cover in plastic wrap and refrigerate until ready to use.
- For the assembly of the galette, Preheat oven to 350°F.
- Divide the dough into two equal pieces. On a floured surface, roll out one piece of dough in a circle (not too thin, not too thick, just right to hold the chutney) using a rolling pin.
- Using a spoon, fill the center of dough with a generous amount of chutney. Fold the edges of the dough over the chutney, moving in a circular motion creating pleats.
- Transfer onto a nonstick baking sheet and bake for 15 minutes.
- Using a brush apply egg wash on the crust and drizzle with sugar. Return to oven allow to bake for 10 minutes.
- Serve and enjoy with a scoop of ice cream or whipped cream.
