Graham Cracker Cookies
A classic from my childhood and comfort food I had to have after a recent therapy appointment! Tasty chocolate frosting nestled between two graham crackers is simple and yet, so special. Best the next day, as the frosting softens the graham cracker just enough that you can take a bite without the frosting squeezing out like it does when you first make them. Our family has been making these for several generations, and we’re guessing that they will quickly become a favorite in your home too. Made using my HONEY GRAHAM CRACKERS which I know you'll also love so much!
Ingredients
- 2.5 cups2.5 cups2.5 cups Powdered Sugar, organic is my preference
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder
- 2 Tbsp2 Tbsp2 Tbsp Whole Milk, can sub dairy free or milk of choice as needed
- 1 oz1 oz1 oz Cream Cheese, Whipped, can sub dairy free as needed, optional
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make honey graham crackers as directed, cool completely before continuing.
- In a small bowl, add the powdered sugar, cocoa, milk and cream cheese (if using). Use a hand mixer to beat ingredients together until smooth, adjusting amounts of powdered sugar or milk to get the desired consistency.
- Spread about 1 tablespoon of on one cracker, then place another cracker on top then carefully press down--repeat with the remaining crackers. You should be approximately 10-12 cookies depending on how "full" you like the filling.
- For best results, let these sit for a few hours as the frosting in the middle will soften up the cracker, so they are easier to eat. They’re even better the next day since the graham cracker softens up.
