Gluten Free Spicy Pepperoni Pizza Bites
My spicy pepperoni pizza bites are the ultimate gluten-free appetizer or snack, bursting with bold flavors and featuring the irresistible kick of Kosterina's Spicy Red Pepper Olive Oil. Perfectly crispy on the outside and oozing with melted mozzarella and pepperoni on the inside, they’re a crowd-pleaser for any occasion (but especially for the Super Bowl)! Whether you’re hosting a party or craving a savory treat, these pizza bites deliver big taste in every bite!
Ingredients
- 111 Pizza Crust + Pretzel Mix - Legit Bread Company, I used the mix from Legit Bread Company
- 4 oz4 oz4 oz Pepperoni, quartered
- 8 oz8 oz8 oz Mozzarella Cheese, cubed
- 1 Tbsp1 Tbsp1 Tbsp Amore [Italian] Seasoning - Primal Palate
- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Peppercorns, Ground Fresh
- 3 Tbsp3 Tbsp3 Tbsp Spicy Red Pepper Olive Oil - Kosterina

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare your gluten-free pizza dough according to the package instructions, then divide it into 12-15 equal pieces.
- Preheat your oven to 400°F.
- Quarter the pepperoni and cube the mozzarella cheese. Toss them in a bowl with the Italian seasoning, sea salt, cracked black pepper, and 1 ½ tablespoons of the Spicy Red Pepper Olive Oil until evenly coated.
- Generously coat the bottom of a baking dish with the remaining olive oil to prevent sticking and add extra flavor.
- Flatten each dough piece into a small circle. Add a tablespoon of the pepperoni and mozzarella mixture to the center, then carefully fold and seal the edges to form a ball. Place each ball seam-side down in the baking dish.
- Sprinkle any leftover pepperoni and mozzarella mixture over the top of the dough balls.
- Bake for 20 minutes, then turn off the oven and leave the dish inside for an additional 5 minutes to ensure the centers are fully cooked.
- Serve warm with a side of your favorite pizza sauce or an extra drizzle of Spicy Red Pepper Olive Oil for dipping!
