philly chicken skillet nachos
usually chicken is NOT my fav to cook, but this philly chicken is so juicy, tender, & full of flavor. I layered it on my favorite siete dip chips & made the most INCREDIBLE cheese sauce. seriously the cheese sauce is the MVP of this recipe. cannot wait for you to make this meal!
Ingredients
cheese sauce
- 5 oz5 oz5 oz Green Chiles, Fire Roasted
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 3 - 4 oz3 - 4 oz3 - 4 oz Swiss Cheese, or provolone
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water
- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Water
meat
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Bacon Grease, or fat of choice
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" pieces
- 1 Tbsp1 Tbsp1 Tbsp Taco Seasoning - Primal Palate
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water
veggies
- Bell Pepper, sliced
- Onion, sliced
- Baby Bella Mushrooms, sliced
for serving
- Grain-Free Dip Chip - Siete Foods, or tortilla chip of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a food processor, add all cheese sauce ingredients, except water.
- transfer cheese sauce + water to a sauce pan & simmer until thickens or until remaining ingredients are prepared.
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs & taco seasoning.
- add in chicken thighs to skillet; cook for 6-8 minutes.
- in a bowl, combine remaining ingredients for the meat, then pour over chicken & simmer for 5-6 minutes or until chicken is cooked through.
- in a separate skillet, saute peppers, onions, & mushrooms until tender.
- to build nachos, add tortilla chips to a plate, then layer on veggies, meat, & cheese sauce.
