Another one pan winner winner chicken dinner! This Creamy Mushroom & Bacon Chicken is so delicious and so easy too! whats not to love, chicken, bacon, mushrooms and spinach all in a dreamy sauce. You can serve it with mashed potatoes or cauliflower rice to soak up all the yummy sauce. Your whole family will love it!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook bacon in a large skillet till crisp, move to plate lined with paper towels, do not drain fat
  2. Mix spice in bowl & divide in half
  3. Toss chicken with half the spice
  4. On medium high heat cook chicken 5-7 minutes per side, move to plate & cover with foil
  5. Add onions & sauté 3 minutes
  6. Add mushrooms, cook till browning
  7. Add garlic, stir one minute
  8. Add broth & bring to a boil
  9. Lower heat to medium
  10. Add coconut cream & stir well
  11. Add chicken back to pan
  12. Add balsamic & remaining spice, stir & simmer 10 minutes
  13. If not thick enough add arrowroot slurry
  14. Add spinach & stir till wilted
  15. Add bacon crumbles & parsley
