Creamy Mushroom & Bacon Chicken
Another one pan winner winner chicken dinner! This Creamy Mushroom & Bacon Chicken is so delicious and so easy too! whats not to love, chicken, bacon, mushrooms and spinach all in a dreamy sauce. You can serve it with mashed potatoes or cauliflower rice to soak up all the yummy sauce. Your whole family will love it!
Ingredients
- 6 - 8 pieces6 - 8 pieces 6 - 8 piecesBoneless Skinless Chicken Thigh
- 1 cup1 cup 1 cupOnion, diced
- 4 cloves4 cloves 4 clovesGarlic, minced
- 8 oz8 oz 8 ozBacon, cut in 1" pieces
- 8 oz8 oz 8 ozBaby Bella Mushrooms, sliced
- 5 oz5 oz 5 ozBaby Spinach
- 24 oz24 oz 24 ozBeef Broth, I like Kettle & Fire
- 0.5 cup0.5 cup 0.5 cupCoconut Cream, just the white hard part
- 2 Tbsp2 Tbsp 2 TbspBalsamic Vinegar
- 0.5 bunch0.5 bunch 0.5 bunchFlat Leaf Parsley, chopped
- 1 tsp1 tsp 1 tspdried Thyme
- 1 tsp1 tsp 1 tspPaprika
- 1 tsp1 tsp 1 tspSalt
- 1 tsp1 tsp 1 tspBlack Pepper
- 1 Tbsp1 Tbsp 1 TbspArrowroot Powder, mixed with 1 tbsp water, if needed to thicken sauce










Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook bacon in a large skillet till crisp, move to plate lined with paper towels, do not drain fat
- Mix spice in bowl & divide in half
- Toss chicken with half the spice
- On medium high heat cook chicken 5-7 minutes per side, move to plate & cover with foil
- Add onions & sauté 3 minutes
- Add mushrooms, cook till browning
- Add garlic, stir one minute
- Add broth & bring to a boil
- Lower heat to medium
- Add coconut cream & stir well
- Add chicken back to pan
- Add balsamic & remaining spice, stir & simmer 10 minutes
- If not thick enough add arrowroot slurry
- Add spinach & stir till wilted
- Add bacon crumbles & parsley
