Beef & Almond Sausage Rolls
Flaky, golden puff pastry wrapped around a rich, flavourful beef filling with toasted almonds for crunch and nutty aromas. I highly recommend making your own puff pastry for the ultimate whole foods meal – it is not that hard and you will be so proud of yourself!
Ingredients

- 0.75 cup0.75 cup0.75 cup Almonds, roughly chopped

- 1 whole1 whole1 whole Carrots, grated
- 0.25 bunch0.25 bunch0.25 bunch Parsley, finely chopped

- 3 Tbsp3 Tbsp3 Tbsp Worcestershire Sauce
- 1 whole1 whole1 whole Egg, whisked
Puff Pastry
- 5 cups5 cups5 cups All Purpose Flour
- 4 tsp4 tsp4 tsp Salt

- 450 grams450 grams450 grams Butter, Unsalted

- 20 - 24 Tbsp20 - 24 Tbsp20 - 24 Tbsp Ice Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If making puff pastry homemade, I have put guideline ingredients for 4 sheets above - but it is best to google a recipe and use any that does not include sugar.
- To prepare the almonds, roughly chop and roast in the oven at 180°C for 15 minutes until lightly golden.
- In a large bowl, mix beef mince, garlic, carrot, parsley, Worcestershire sauce, and toasted almonds. Season generously with salt and pepper.
- Cut puff pastry sheets in half to make rectangles 3 inches wide. Roll the filling into 1-inch thick logs and place them along the edge of the pastry. Brush the pastry edge with whisked egg, then roll tightly to seal.
- Slice & bake; Cut into desired lengths. Place on a lined baking tray, brush the tops with egg, and sprinkle with poppy or sesame seeds if using.
- Bake at 200°C for 30 minutes, flipping halfway through.
- Let them cool slightly and enjoy—perfect for dipping in a homemade relish or mustard.
