- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
- In a separate large bowl, mix tahini, maple syrup, coconut sugar, vanilla extract, and egg until smooth and well-combined.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Fold in the chocolate chips.
- Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet, leaving about 2 inches between cookies. Gently flatten each ball of dough with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown. The cookies will be soft when they come out of the oven but will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Sprinkle with flaky sea salt if desired.
