Slow Cooker Italian Chicken and Potatoes
A healthy version of the ballpark classic, sausage and peppers, I've added in lean chicken breast, hearty potatoes and plenty of peppers and onions in this easy slow cooker dinner recipe.
Ingredients
- 1 lb1 lb1 lb Chicken Breasts, Boneless Skinless
- 242424 Potatoes, Baby, Terrific Trio or other Little Potato Company variety
- 111 Red Bell Pepper, seeded and sliced
- 111 Onion, medium, thinly sliced
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 2 tsp2 tsp2 tsp Salt
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp Oregano, Dried, or 1/2 teaspoon fresh
- .5 cup.5 cup.5 cup White Wine, or dry red, optional
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place all ingredients in slow cooker and cook on Low for 3-4 hours or until chicken is cooked through.
- Remove chicken and slice it on a cutting board before serving with the potatoes, peppers and onions. Garnish with fresh oregano if you wish.
