  1. Adjust the oven rack to the lower-middle position and preheat the oven to 275℉.
  2. Heat 3 tablespoons of olive oil in a Dutch oven over medium heat until shimmering.
  3. Add the onion and cook, stirring occasionally, until softened about 3-5 minutes.
  4. Add the garlic and cayenne. Cook until fragrant, about 30 seconds.
  5. Add the water, baking soda, and green beans. Bring to a simmer.
  6. Reduce the heat to medium-low and cook, stirring occasionally, for 10 minutes.
  7. Stir in the tomato paste, tomatoes with their juices, salt, and pepper.
  8. Cover the pot and transfer to the oven.
  9. Cook until the sauce is slightly thickened and the green beans can be easily cut with a fork. About 40-50 minutes.
  10. Remove from the oven and stir in the parsley. Season with lemon juice to taste. Drizzle with the remaining olive oil and serve warm or at room temperature.

Notes

If you like your green beans with some "tang", add a dollop of yogurt spooned over the top before serving. Store leftovers in an airtight container in the fridge for 3-4 days and reheat gently on the stovetop.
