Sticky Date Overnight Weetbix

Ingredients
Base
- 2 pieces2 pieces2 pieces Weetabix
- 0.333 cup0.333 cup0.333 cup Whole Milk, or any milk of choice
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 0.5 tsp0.5 tsp0.5 tsp Cinnamon, Ground
Yoghurt Layer
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Protein Powder, plant based works best
Sticky Date Caramel Layer
- 2 whole2 whole2 whole Medjool Dates, pitted, soaked in hot water for 5 mins
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter
- 2 Tbsp2 Tbsp2 Tbsp Whole Milk, or any milk of choice
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Base: In a bowl/container, combine weetbix, milk, vanilla extract and cinnamon, and flatten out.
- Yoghurt Layer: Mix yoghurt and protein powder in a bowl until smooth. Spread over weetbix base.
- Sticky Date Caramel Sauce: Blend soaked medjool dates with almond butter and milk until smooth. Spread over yoghurt layer.
- Refrigerate overnight (or at least 15 mins), top with flaky sea salt and enjoy!
