- Combine all your base ingredients into a container.
- Mash your blueberries in a separate bowl (add sweetener if you would like). Spread over the weetbix base.
- Spread yoghurt evenly over the blueberry layer.
- In another bowl, whisk together cocoa powder, water and maple syrup (be careful not to add too much liquid, so that it is a ganache like consistency).
- Spread this over the yoghurt layer.
- Top with desiccated coconut.
- Refrigerate overnight (or at least 15 mins) and enjoy!
