Upside Down Tater Tot Breakfast Casserole
In this Upside Down Tater Tot Casserole, we flipped the crust around and put it on top! It's an easy gluten-free casserole perfect for breakfast, brunch or brinner!
Ingredients
- 32 oz32 oz32 oz Tater Tots, Frozen
- 1 lb1 lb1 lb Breakfast Sausage, or meat of choice, bacon, etc. Cooked & drained
- 121212 Eggs
- 1 cup1 cup1 cup Almond Milk, Dairy-Free: Unsweetened Plant-Based
- .5 tsp.5 tsp.5 tsp Salt
- .5 tsp.5 tsp.5 tsp Garlic Powder
- .25 tsp.25 tsp.25 tsp Black Pepper
- .5 cup.5 cup.5 cup Bell Pepper, onions, mushrooms, etc., chopped
- 2 cups2 cups2 cups Cheddar Cheese, shredded
- Chives, or Green Onions for garnish

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°
- Spread cooked meat on the bottom of a greased 9x13 pan or a cast iron skillet. If you cooked the meat in a cast iron pan, continue making the entire recipe in the same pan.
- Sprinkle cheese on top of the meat, if using.
- In a separate bowl, beat eggs, milk, seasonings & veggies. Pour on top of meat.
- Cover top with frozen tater tots in a single layer. *When making ahead, DO NOT add the tater tots until ready to bake*
- Bake at 350° for 50-60 minutes until eggs are set.
- Garnish with chives.
Notes
We used Ore-Ida Tater Tots, Good Karma Foods Flax milk w/protein and Bob Evans Naturally ground sausage for this recipe. We did not use cheese and it still tastes great without it!
