Protein “Cheesecake” Chia Pudding

Ingredients
- 0.5 cup0.5 cup0.5 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Milk, Dairy or Non Dairy
- .25 cup.25 cup.25 cup Chia Seeds
- 1 tsp1 tsp1 tsp Alcohol-Free Vanilla - Color Kitchen Foods
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- .25 cup.25 cup.25 cup Medjool Dates
- 2 Tbsp2 Tbsp2 Tbsp Honey Cinnamon Sweet Thins - Simple Mills, Crushed (OPTIONAL)
- .25 cup.25 cup.25 cup Blueberries, (OPTIONAL)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Boil dates and soak in the warm water for about 10 minutes to soften them. Drain and set aside.
- 2. In a blender or food processor, combine the cottage cheese, milk, soaked dates, vanilla extract, maple syrup, and salt (if using). Blend until smooth and creamy.
- 3. Pour the chia seeds into a bowl with the blended mixture and stir. Mix well to ensure the seeds are evenly distributed.
- 4. Cover the bowl or jar and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and create a pudding-like texture.
- 5. Once set, give the pudding a good stir. Top with your favorite fruits, nuts, or a sprinkle of cinnamon if desired.
Notes
Blueberries and crushed graham crackers are optional. For a gluten free version, I recommend using Honey Cinnamon Sweet Thins by Simple Mills
