Turkey Tetrazzini (Gluten free)
This is my spin on a classic Italian-American dish. Typically it has mushrooms, but my family isn’t a big fan. Of course if you love them then by all means add them in. This dish is creamy and loaded with vegetables.
Ingredients
- 2 cups2 cups2 cups Turkey Breast, leftovers, pulled or chopped up
- 1 Tbsp1 Tbsp1 Tbsp Butter, Salted
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- .5.5.5 Onion, Diced
- 2 pieces2 pieces2 pieces Celery, Diced
- 111 Zucchini, Diced
- .5.5.5 Bell Pepper, Diced
- 1 cup1 cup1 cup Green Beans, Chopped about 1.5” long
- 2 cloves2 cloves2 cloves Garlic, Minced
- 1 tsp1 tsp1 tsp Salt
- .5 tsp.5 tsp.5 tsp Black Pepper
- 1.5 tsp1.5 tsp1.5 tsp Italian Seasoning
- 4 oz4 oz4 oz Cream Cheese, Full Fat
- .75 cup.75 cup.75 cup Chicken Bone Broth
- .33 cup.33 cup.33 cup Half and Half
- 1 cup1 cup1 cup Aged Cheddar Cheese
- .5 cup.5 cup.5 cup Havarti Cheese
- .5 cup.5 cup.5 cup Parmesan Cheese
- 111 Green Onion (Scallion), Diced
- 10 oz10 oz10 oz Gluten-Free Spaghetti - Jovial Foods
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If you are using raw turkey cook it first in a pan with some oil. This takes 8-10 minutes.
- If you are using cooked turkey then either pull it apart or chop it into bite size pieces.
- Put cooked meat into a large bowl.
- Start a pot of water for the pasta.
- Cook per package instructions. While this cooks continue steps below.
- In a large skillet add oil and butter on medium heat.
- Add all of the vegetables, salt, pepper, and Italian seasoning. Stir and cook for 10 minutes on medium heat.
- Add vegetables to the bowl with the turkey.
- Put skillet back on heat and add cream cheese, bone broth, and half n half. On medium heat let the cream cheese melt, use a whisk to break apart.
- Add cheddar and havarti cheeses, stir. Remove from heat.
- Pour over turkey and vegetables. Stir
- Add cooked pasta to the bowl and stir. Pour everything into an oven safe dish.
- Top with Parmesan and scallions. Bake for 15 minutes to heat through.
Notes
You can easily use chicken for this dish if you don’t have turkey available. As mentioned above add mushrooms, leeks, or peas if you like to change things up.
