Date Nut Bites (Paleo)
My husband loves dates so we always have them in the house. And I love chocolate so…this is the perfect ‘candy’ bite. Using quality chocolate improves the nutrient value as dark chocolate has health benefits. You can use different nut butter or nuts as you prefer, I’ve tried many combinations over the years. Enjoy
Ingredients
- 4 oz4 oz4 oz Dark Chocolate, 70% or so
- 101010 Medjool Dates, pitted
- .5 cup.5 cup.5 cup Almond Butter, or other nut butter
- .25 cup.25 cup.25 cup Macadamia Nuts, Raw, chopped, or other nuts you prefer
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Carefully slice each date long wise, but try to leave one side attached.
- Using a teaspoon add about 1/2 tsp or so to the inside of each date.
- Put a few chopped nuts in the nut butter and press together gently.
- Set onto a plate. Repeat.
- Freeze dates while you melt the chocolate.
- In a small pan add the chocolate (you can add 1 tsp of coconut oil if you like the finished product shiny).
- With the heat on low let the chocolate melt, stir frequently. Don’t let the pan get too hot or it will seize up. Use a double boiler if you want to be safe.
- Once the chocolate is melted and smooth remove dates from freezer.
- Using a fork place one date on the fork and set into the chocolate. Coat the date, using the fork let excess chocolate drip off.
- Set onto a piece of parchment paper on a plate or small pan.
- Repeat.
- Freeze for 10 minutes. Then put into air tight container and keep in refrigerator for up to a week.
Notes
These date nut bites taste like caramel, nut, and chocolate. Oh so good. Mix up the nut butter and nuts. I sometimes use peanut butter and almonds.
