Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350°. Lightly spray two (6-donut slots each), nonstick donut pans with avocado oil spray. Use paper towel to coat donut slots so there are no visible drops of oil.
  2. Whisk well with fork to combine drink mix packets in water until fully combined and no drink mix clumps remain. Set aside.
  3. To a large mixing bowl, add gluten-free flour, sugars, cornstarch, baking powder & salt; whisk to combine.
  4. Pour lemonade water over dry ingredients; stir to combine.
  5. Add freshly-grated lemon zest, lemon extract and avocado oil; stir until combined and smooth.
  6. Transfer dough to piping bag. Pipe into prepared donut pans, filling each slot about 3/4-full.
  7. Bake on middle rack of oven for 9-11 minutes (donuts should spring back when you touch lightly with fingertip). Cool in pan for 10 minutes before removing to wire rack to continue cooling.
  8. Meanwhile, in medium bowl, whisk with fork to combine powdered sugar and lemon juice until combined & smooth.
  9. *Tip: To keep counter clean, place a large sheet of parchment paper under wire rack before you dip donuts in glaze to catch excess glaze that will drip down. Then roll-up paper and discard. *
  10. Place one donut at a time in glaze; gently turn with fork to coat each side, holding donut over bowl to catch excess glaze. Use fork to carefully place donut on wire rack. Continue with remaining donuts. Serve once glaze has set. Best served the same day the donuts are made. Yield: 12 donuts.

Notes

Leftover donuts can be stored in a single layer in an airtight container in the fridge for 1-2 days so glaze remains set, yet it is recommended that donuts are consumed the same day they’re baked for optimal texture. Gluten-free. Dairy-free. Egg-free. Nut-free. Soy-free. Sesame-free. Legume-free.
