  1. Pre-heat oven to 350 degrees. Prepare cookie sheets with parchment or spray with cooking spray.
  2. Melt together the shortening, butter, and peanut butter
  3. Mix in sugars, egg, baking soda and vanilla.
  4. Add the flour, but pay attention, the dough will tell you how much flour you need. Sometimes only 1 cup is needed.
  5. Fold in peanut butter chips.
  6. Scoop in even spoonfuls onto cookie sheet and smash in a criss cross pattern with a fork.
