- Preheat oven to 350°F and line an 8x8” pan with parchment paper.
- In a large bowl, mix melted coconut oil, sugar, peanut butter, egg, and vanilla until smooth.
- Stir in GF all-purpose flour, baking soda, baking powder until just combined.
- Fold in chopped peanut butter cups (save a few for topping!).
- Spread batter evenly into the pan and press extra PB cup pieces and choc. chips on top.
- Bake for 20–24 minutes, until edges are golden and center is just set. Don’t overbake — they firm up as they cool!
- Let cool completely before slicing into squares.
