  1. Preheat oven to 350°F and line an 8x8” pan with parchment paper.
  2. In a large bowl, mix melted coconut oil, sugar, peanut butter, egg, and vanilla until smooth.
  3. Stir in GF all-purpose flour, baking soda, baking powder until just combined.
  4. Fold in chopped peanut butter cups (save a few for topping!).
  5. Spread batter evenly into the pan and press extra PB cup pieces and choc. chips on top.
  6. Bake for 20–24 minutes, until edges are golden and center is just set. Don’t overbake — they firm up as they cool!
  7. Let cool completely before slicing into squares.
